When you catch your own tuna, bleed it quickly so that the meat stays fresh. The head and tail are the best spots for a quick bleed, but it can also be done behind the gills near the spinal column. It’s also important to make sure that you cut any blood lines, hard to remove organs, or stomach lining away from the tuna before storing it, as they can spoil the meat.
